There have been some funny memes about people still feeling the effects of their holiday indulgences, including cheese, wine and chocolate. It’s time to shake off the sluggishness.
Enter Veganuary, a global movement encouraging people to try plant-based eating during January. Instead of rigid rules, it focuses on discovery and is a chance to explore new foods, flavors, and maybe even a healthier you.
Celery Soup – Something Ordinary Becomes Extraordinary
This year, my Veganuary inspiration came from an unlikely source: leftover celery. My husband, always practical, had sliced and frozen the extra celery we didn’t use during the holidays. That surplus became the foundation of a delicious Celery Soup I spotted in Costco magazine. We brought the soup to a “soup-on-Sunday” gathering, and it was a triple win: creamy (from pureeing potatoes not from dairy), comforting, and healthy.

I’ll admit, I’m not always drawn to “vegan” recipes. But I do love recipes that happen to be vegan, like this one. And, the super-easy-to-make croutons, crispy and golden, were the “icing on the cake.” Who knew soup could feel indulgent and not have any dairy or animal products?
For me, this soup brought more than just a tasty meal—it’s a reminder to see opportunity in the ordinary. Leftover celery became a culinary discovery. A nudge to try Veganuary became a moment of creative joy in the kitchen. And that’s the magic, isn’t it? Exploring new things every day to enrich our lives, even in small ways.

It was such a good find in the January edition of the Costco magazine. I bet the basic recipe would work with a variety of other vegetables. Recipes are always a foundation for modifying to the ingredients you have on hand and the flavors you’re craving.
