With the Memorial Day weekend underway in the U.S., it’s often one of the first BBQ, pool or lake weekends of the summer season. Having a few crowd-pleasing libations –alcoholic and non-alcoholic versions – on hand makes it extra festive.

One of my recent favorites is the Rosemary Paloma. During a happy hour with a friend, she ordered a light-pink cocktail with a beautiful garnish. To my delight, it was a Paloma – a tequila-based beverage with grapefruit juice and lime.

Intrigued, I later searched for recipes and stumbled upon a rosemary-infused version from The Cocktail Snob. Utilizing fresh rosemary from my herb garden to make a simple syrup, this twist on the classic is both delicious and easy to make into a refreshing mocktail or a potent cocktail.

Batching for Effortless Sipping

For fuss-free entertaining, I prepare batches of cocktails and mocktails in advance. The key is using a glass pitcher and deciding on a ratio – whether you want to make enough for 4, 6, or 8 servings (or even more – but keep the batches small for easy storage).

Do not add ice to the pitcher, and before pouring, gently stir the pitcher to recombine the ingredients. Don’t forget to mark which pitcher contains alcohol and which is the mocktail version!

Another summertime staple in my repertoire is the Original Trader Vic Mai Tai. This iconic rum-based cocktail, courtesy of HGTV, is a tropical delight that transports you to island paradise with every sip. Like the Rosemary Paloma, making a non-alcoholic version for those who prefer a mocktail is easy—you can even find non-alcohol versions of Orgeat, the all-important almond syrup that gives the Mai Tai its subtle yet all-important signature flavor.

Garnish and Enjoy

When it comes to garnishes, it’s best to keep them separate until ready to serve. This ensures they maintain their freshness and don’t become wilted or soggy in the batched beverages. A few slices of grapefruit or lime, a sprig of rosemary, or a pineapple wedge can add color and flavor to your cocktail or mocktail.

So, as you continue to enjoy Memorial Day weekend, consider prepping a pitcher or two of your favorite summer bevies. Whether you’re sipping a Rosemary Paloma or an Original Trader Vic Mai Tai—with or without alcohol—you’ll be on your way to creating a memorable and enjoyable holiday celebration.
